How To - Bombay Potatoes

How to make Chiman's delicious Bombay Potatoes

1. Boil the new potatoes their jackets until just soft.  They don't have to be new - any small potatoes will do (even tinned ready prepared if you are in a real hurry!)  Drain and cut into 3cm cubes.

2. Using a large, heavy frying pan, heat the oil and, when hot, add the spices and sizzle them for 15 seconds.  This is when you start to smell those fantastic spices.

3. Add the potatoes and stir fry for 5 minutes - and that is all there is to it! 

4. Sprinkle with lemon juice and enjoy! 

Quick and easy and a great acompanyment to any Indian dish, or enjoy them on their own as a snack.  Serve with chopped coriander for extra colour and flavour.
